How to Freshen Up the Crust!

When the sourdough loaf comes out of the hot oven the crust is crispy and delicious. The first day is spent trying to resist eating all of that delicious bread with its crispy, crackly crust.

Next day, what happened? Everything is still delicious but where did the crispiness go? The crust is soft, chewy, even leathery. What the heck!

During the night some of the interior moisture of the loaf has slowly migrated to the surface. This causes the surface, the crust, to soften. But think about it. It’s only moisture.

Pop that loaf into a hot oven. Say 400 degrees. Let the hot oven evaporate that surface moisture for 10 minutes. There you go. Crispy again. Go make an avocado toast or some cinnamon toast. All is well again.
